Those who know me well know that I am not a huge fan of sunshine and heat, but after a lot of snow, the sun came out today and it felt so nice! It was also just about my favorite temp (somewhere in the 50s), so we opened the windows and got outside! After checking out the location of our soon to be Community Support Agriculture farm, we went for a walk in the fading sunshine.
When we got back inside, we got to work! John has been digging around the web for the best pound cake recipe in the world, as he is not happy with any of the ones he’s tried before, so we decided to try one today. Dessert tonight is Meyer Lemon Blueberry Pound Cake and dinner is leftovers. Well, not quite. There’s no such thing as boring leftovers in our house! The Oscars are tonight and so naturally, I wanted pizza. We decided to make use of the food in our fridge to make Thin Crust Chorizo Pizza.
Thin Crust Chorizo Pizza
- 2 Whole wheat tortillas
- Mozzarella and Cheddar Cheese (about 3 cups)
- 1 cup Tomato Sauce, spiked with Chili powder
- Homemade Chorizo and Sauteed onions
In a 375 degree oven, heat the tortillas about 5 minutes (if you skip this, you will have soggy pizzas, ask us how we know).
Top crispy tortillas with sauce, half the cheese and chorizo, top remaining cheese, cook about 10 minutes. Eat!
